Sweet Potato Fries
Ingredients:
- 2 large sweet potatoes
- 2-3 Tablespoons of cornstarch
- 2 TBSP olive oil or coconut oil
Dipping Sauce
- 1/2 cup Mayonnaise
- 1/4 tsp Cayenne Pepper
- 1 tsp Sriracha Sauce
Directions:
- Preheat oven to 425° F.
- Peel and cut sweet potatoes into fries no thicker than 1/2 inch.
- Optional: Soak in water for minimum of one hour, but preferably for half a day.
- Drain potatoes and put if bowl with a lid.
- Add cornstarch and shake to coat potatoes with corn starch.
- Optional: Add oil for crispier fries and shake again.
- Place sweet potatoes in single layer on baking sheet lined with Parchment paper.
- Bake for 30 - 45 minutes until crisp flipping as needed.
Dipping Sauce
- Mix all ingredients and serve with fries.
